When we decided to create these No-Bake Banana Oatmeal Cookies, we were curious to learn their history. Looking into it we found that cooks as far back as the ancient Middle East were the ones who first introduced this type of no-bake cookie, which we found fascinating. Much later on, no-bake cookies were seen in the American cookbooks in the 1930s. Though the cookies were widely popular in the mid-20th century, they still remain a classic even now, and that’s surely due to their amazing taste and simplicity.
As it can be guessed from the title, these delectable cookies consist of banana and oatmeal which are a couple of the main contributors towards them being a healthy and delicious option for breakfast. Remember, a sound breakfast is a must for sound health. We’ve played around with the recipe to create a great balance of moist and chewy, that will ensure you start your day off in the best possible way. That’s the way our cookies crumble. By the way, these cookies also have the added benefit of being nutritious too, being rich in Fibre, Copper, Manganese, Phosphorus, Magnesium and Thiamine.
Finally, it must be mentioned that these cookies are dairy free, gluten free and vegan, catering for a few different dietary requirements too. Simple to make and easy to transport. They’re a breakfast no-brainer.
How To Make Banana Oatmeal Cookies (no-bake)
Preparation Time: 1 hour
Cooking Time: 10 minutes
Servings: 12 cookies
- 240g/8.5oz ripe bananas, cut into chunk
- 150g/5.25oz vegan chocolate chips
- 60ml/2fl oz coconut oil
- 30g/1oz chia seeds
- 5g/0.25oz cocoa powder
- 200g/7oz quick-cooking oats
- 10ml/0.33fl oz vanilla extract
- 15ml/0.5fl oz maple syrup
- Combine bananas, chocolate chips, coconut oil, chia seeds, cocoa powder and maple syrup in a sauce pan. Simmer over low heat until bananas are fully tender, about 5 minutes.
- Mash the bananas using a potato masher and continue heating for another 5 minutes.
- Turn off the heat and stir in the vanilla.
- Fold in the oats.
- Spoon onto a baking sheet lined with parchment paper.
- Leave in the fridge/chiller for an hour to set
